Högtorp Gård

Högtorp Gård is an organic certified farm and flavor producer located in Sörmland in the forest and meadow rich landscape of Mälarmården. Here on land cultivated since the 1600s forest meadows wetlands and pastures come together in an environment rich in biodiversity and flavor possibilities.

The farm is currently owned and run by the couple Lena Engelmark Embertsén and Ola Engelmark a chemical engineer and a forest ecologist. Together they oversee the entire process from harvesting to refining of wild plants mushrooms and ingredients from the farm’s own grounds. With a unique combination of scientific expertise and deep respect for nature they have created a business where innovation and sustainability go hand in hand.

The foundation of their work is to capture nature’s own flavors and turn them into products that reflect the character of the Swedish forest. Lena describes her mission as discovering as many flavors as possible on Högtorp’s land and highlighting their unique qualities through innovative methods.

At the same time ecological thinking is a core part of the farm’s philosophy. Everything is harvested carefully and thoughtfully aiming to preserve and strengthen biodiversity. Nothing is taken without giving back and all processes respect the long term health of the ecosystem.

Högtorp Gård’s products range from spruce shoot oil and birch shoots to syrup ramson capers pine shoots and dandelion based flavors. The ingredients are carefully selected and refined without unnecessary additives to let nature’s own flavors speak for themselves. One especially noted product is the spruce shoot oil which has even been served at the Nobel Banquet a clear sign of the high quality that runs through everything they do.
