In Sweden, whitefish are used for their roe, which makes the famous “Kalix löjrom”, Kalix caviar—a Swedish specialty from the Bothnian archipelago, Kalix being a town in this bay. Liura’s brilliant idea is to prepare these tiny fish, traditionally overlooked, in the style of boquerones.
Their taste combines acidity and mild saltiness, with a melt-in-your-mouth texture. Perfect on toast, in pintxos, or simply on their own.
