MARIA PRINTZ EMOND
the Chef
This tireless creative has worked for over 25 years as a chef in Sweden (her home country). A key figure in the Swedish culinary scene, she has
led several renowned establishments and is very active in organizations promoting local gastronomy.
She designs the dishes on the menu with a focus on seasonal products and Swedish celebrations. She trains the teams in culinary techniques, manages relationships with local artisans and producers. She describes herself as a “culinary translator” and adapts Swedish dishes to Parisian palates.
ANNA LINDELL
the ceramist
From the village of Jönåker, Anna designs stoneware and porcelain tableware in her self-built workshop, inspired by nature and Swedish artisanal tradition.
Each piece is unique and personalized, making her one of the most
sought-after ceramicists by Swedish restaurateurs.
LENA ENGELMARK - HÖGTORP GÅRD

A trained chemical engineer, Lena sources the best that nature has to offer and transforms it into oil, marinade, syrups, and other preparations. She forages wild plants and mushrooms on her own land and transforms these ingredients into innovative preparations, which have earned her several awards and a place on the finest tables in the world.

THE SWEDISH INSTITUTE
The Swedish Institute is Sweden’s only cultural institute abroad. It promotes cultural and artistic exchanges between France and Sweden through its programming, as well as its residencies for artists and researchers based in Sweden, and its Swedish language courses.

A meeting point for all these artisans, Fika is another story that Caroline and Damien Nobile wanted to tell, born from the imagination of gourmet Parisians who fell in love with Sweden and the ‘fika’ break, so well suited to the Parisian pace.
